2 largesweet potatoes

Instructions
- Peel and cut sweet potatoes into thin fries, about ¼ inch thick
- Soak in cold water for 30 minutes to remove excess starch
- Drain and pat dry thoroughly with paper towels
- Heat oil in a deep pan or fryer to 350°F (175°C)
- Fry potatoes in batches for 4–5 minutes until golden and crispy, stirring occasionally
- Remove with a slotted spoon and drain on paper towels
- Season immediately with salt, paprika, and cayenne if using
- Serve hot
