  1. Peel and cut sweet potatoes into thin fries, about ¼ inch thick
  2. Soak in cold water for 30 minutes to remove excess starch
  3. Drain and pat dry thoroughly with paper towels
  4. Heat oil in a deep pan or fryer to 350°F (175°C)
  5. Fry potatoes in batches for 4–5 minutes until golden and crispy, stirring occasionally
  6. Remove with a slotted spoon and drain on paper towels
  7. Season immediately with salt, paprika, and cayenne if using
  8. Serve hot
