Instructions
- Mash bananas in a bowl until smooth.
- Whisk eggs with mashed banana, milk and melted butter.
- In another bowl, mix flour, baking powder and salt.
- Fold dry ingredients into wet ingredients until just combined — don't overmix.
- Heat a griddle or non-stick pan over medium heat and lightly butter it.
- Pour batter in ¼-cup portions onto the hot surface.
- Cook 2–3 minutes until edges look set and bubbles form on top, then flip.
- Cook another 1–2 minutes until golden.
- Serve warm with butter and maple syrup.
