Banana Pancakes

  1. Mash bananas in a bowl until smooth.
  2. Whisk eggs with mashed banana, milk and melted butter.
  3. In another bowl, mix flour, baking powder and salt.
  4. Fold dry ingredients into wet ingredients until just combined — don't overmix.
  5. Heat a griddle or non-stick pan over medium heat and lightly butter it.
  6. Pour batter in ¼-cup portions onto the hot surface.
  7. Cook 2–3 minutes until edges look set and bubbles form on top, then flip.
  8. Cook another 1–2 minutes until golden.
  9. Serve warm with butter and maple syrup.
