Butter & Tomato Ravioli with Broccolini

  1. Bring a large pot of salted water to a boil. Cook the ravioli according to package instructions until they float and are tender. Drain and set aside.
  2. While the ravioli cooks, halve the onion and place it in a saucepan with the canned tomatoes and butter. Simmer over medium heat for 10–15 minutes until the onion softens and the sauce thickens slightly. Season with salt and pepper.
  3. Trim the broccolini and cook in boiling salted water for 3–4 minutes until tender-crisp. Drain.
  4. Divide the ravioli among plates, spoon the tomato sauce over, and serve the broccolini alongside.
