Chewy Honey Oat & Nut Bars

  1. Preheat oven to 180°C. Line a 9x13 inch baking pan with parchment paper.
  2. Melt butter with honey and brown sugar in a saucepan over low heat, stirring until smooth.
  3. Stir in vanilla, then remove from heat.
  4. In a large bowl, combine oats, barley flakes, walnuts, cashews, and salt.
  5. Pour the honey mixture over and stir well until everything is coated and sticky.
  6. Press firmly into the prepared pan, evening out the top.
  7. Bake for 20–25 minutes until golden but still soft in the middle.
  8. Cool completely in the pan (at least 2 hours) before cutting into bars.
